| Τελετή τσαγιού- οι απαρχέςΤο τσάι έφτασε στην Ιαπωνία λίγο μετά το 900 μ.Χ. μέσω ενός βουδιστή καλόγερου που επέστρεψε από ένα ταξίδι στην Κίνα και σχεδόν αμέσως ξεκίνησε η καλλιέργειά του στη χώρα. Περί τα τέλη του 12ου αιώνα άρχισε να διαχέεται η πρακτική της παρασκευής τσαγιού τύπου μάτσα (σκόνη από αλεσμένα φύλλα πράσινου τσαγιού, που αναμιγνυόμενη με ζεστό νερό, έδινε ένα τσάι ανοιχτοπράσινης απόχρωσης). Το μάτσα μέχρι τότε χρησιμοποιείτο κυρίως στα μοναστήρια, για να διατηρούν τα αποθέματα ενέργειας οι καλόγεροι κατά τις ατέλειωτες ώρες του διαλογισμού και ήταν ένα προϊόν εξαιρετικά ακριβό, καθώς (ακόμη και σήμερα) για την παρασκευή μισού κιλού μάτσα, απαιτούνται πάνω από οκτώ ώρες επεξεργασίας. Μέσα στον 13ο αιώνα, όπου οι πολεμιστές σαμουράι ουσιαστικά διοικούσαν τη χώρα, το τσάι και οι πρακτικές που σχετίζονταν με αυτό, είχε μετατραπεί σε σύμβολο κοινωνικής καταξίωσης και είχε πάρει το ρόλο του ποτού της άρχουσας τάξης. Το παραπάνω σκηνικό άρχισε να αλλάζει με την έλευση ενός ανθρώπου. Ο Σεν Νο Ρικιού, ακολουθώντας τη φιλοσοφία του ίτσι-γκο ίτσι-ε, σύμφωνα με την οποία κάθε συνάντηση (δυο ανθρώπων) θα πρέπει να αποθησαυρίζεται γιατί δε θα μπορέσει ποτέ ξανά να επαναληφθεί (κατά τον ίδιο ακριβώς τρόπο), έθεσε τις αρχές που έκτοτε καθορίζουν τη φιλοσοφία της τελετής του τσαγιού: αρμονία, σεβασμός, καθαρότητα και ηρεμία.Η τομή του Σεν Νο Ρικιού στην διαμορφωμένη στα γούστα της αριστοκρατίας τελετή του τσαγιού ήταν τεράστια. Αντικατέστησε τα εξεζητημένα σκεύη με απλούστατα και ‘προχώρησε’ από τα ακριβά περίπτερα τσαγιού σε ταπεινά ξύλινα κτίσματα με αχυρένια στέγη, η πόρτα των οποίων ήταν επίτηδες μικρή, ώστε οι καλεσμένοι να μπαίνουν σχεδόν σκυφτά και να αυθυποβάλλονται σε μια αίσθηση ‘αναγκαστικής’ ισότητας. [center] Το γεγονός ότι το κτίσμα είναι λιτό και τα σκεύη απλά, λέει πάντως τη μισή αλήθεια. Τα πάντα είναι σχεδιασμένα ώστε να δίνουν την αίσθηση μιας εκλεπτυσμένης ανέχειας. Ουσιαστικά όμως, το περίπτερο του τσαγιού είναι το αποτέλεσμα ενός βαθυστόχαστου καλλιτεχνικού σχεδιασμού, η σημασία στη λεπτομέρεια του οποίου και η αξία των υλικών που έχουν χρησιμοποιηθεί, ξεπερνούν ακόμη και αυτήν των πιο πλούσιων σε διακόσμηση ναών, τα δε σκεύη που χρησιμοποιούνται, τις περισσότερες φορές είναι πολύ παλιά χειροποίητα κομμάτια ανεκτίμητης αξίας.Εσωτερικά στο περιπτέρο, απουσιάζει οποιουδήποτε είδους διακόσμηση, με μόνη εξαίρεση την τοκονόμα, μια εσοχή όπου ο υπεύθυνος για την τελετή του τσαγιού τοποθετεί ένα κύλινδρο με κάποια ζωγραφιά ή μια καλλιγραφία σχετική με την περίσταση, καθώς και μια απέριττη σύνθεση με εποχιακά λουλούδια. | Matcha Πράσινο Τσάι Ιαπωνίας Η Τελετή του Τσαγιού στην Ιαπωνία, γνωστή και ως "chanoyu", είναι μια πολιτιστική δραστηριότητα που περιλαμβάνει την τελετουργική προετοιμασία και παρουσίαση του matcha, που είναι πράσινο τσάι σε μορφή πούδρας. Έχει ένα έντονο πράσινο χρώμα. Στη διάρκεια της τελετής, για την παρασκευή του χρησιμοποιείται ένα "πινέλο" φτιαγμένο από κλαδί bamboo. Μπορείτε όμως να το φτιάξετε με πιο απλό τρόπο βάζοντας μία πολύ μικρή ποσότητα μέσα σε μία κούπα με ζεστό νερό. Η γεύση του είναι πικρή και στυφή και συνοδεύεται με γλυκές γεύσεις. Η ανάμιξη (το χαρμάνι) στο τσάι είναι θεμιτή και μερικές φορές επιβεβλημένη, όταν γίνεται με τσάι ίσης αξίας. Στις σπάνιες όμως ποιότητες τσαγιού, που η καλλιέργεια είναι ξεχωριστή, η παραγωγή μικρή, η επεξεργασία ιδιαίτερη και η αξία μεγάλη, η ανάμιξη ή προσθήκη γεύσεων από λουλούδια, φρούτα ή μπαχαρικά, θίγει την ποιότητα και μειώνει την αξία του αυθεντικού. It is sometimes referred to colloquially as "popcorn tea" because a few grains of the rice pop during the roasting process and resemble popcorn. This type of tea was originally drunk by poor Japanese, as the rice served as a filler and reduced the price of the tea; which is why it is also known as the "people's tea". Today it is consumed by all segments of society. Tea steeped from these tea leaves has a light yellow hue. Its flavor is mild and combines the fresh grassy flavor of green tea with the aroma of the roasted rice. The water to steep this tea should typically be about 80–85 °C (176–185 °F). A steeping time of 3–5 minutes is recommended, depending on desired strength and the source of the tea - some sources recommend as little as one minute of brewing time. | Japanese green teas Green tea (緑茶, Ryokucha[color:020a=#00e]?) is ubiquitous in Japan and therefore is more commonly known simply as "tea" (お茶, ocha[color:020a=#00e]?). It is even referred to as "Japanese tea" (日本茶, nihoncha[color:020a=#00e]?) though it was first used in China during the Song Dynasty, and brought to Japan by Myōan Eisai, a Japanese Buddhist priest who also introduced the Rinzai school of Zen Buddhism. Types of tea are commonly graded depending on the quality and the parts of the plant used as well as how they are processed. The word "sencha" literally means "decocted tea," [dubious – discuss] referring to the method that the tea beverage is made from the dried tea leaves. This is as opposed, for example, to matcha (抹茶), powdered Japanese green tea, in which case the green tea powder is mixed with hot water and therefore the leaf itself is included in the beverage. Among the types of Japanese green tea prepared by decoction, "sencha" is distinguished from such specific types as gyokuro and bancha. It is the most popular tea in Japan, and represents about 80 percent of the tea produced in Japan. The flavor depends upon the season and place where it is produced, but it is considered that the most delicious sencha is that from the first flush of the year, the shincha "new tea." The shincha season, depending upon the region of the plantation, is from early April to late May (around the 88th day after the spring equinox). It is considered that the ideal color of the sencha beverage is a greenish golden color. Depending upon the temperature of the water in which it is decocted, the flavor will be different, and this also is the appeal of sencha. With relatively not too hot water, it is relatively mellow; with hot water, it is more astringent. [1] Unground tea was brought from China after matcha (抹茶, powdered green tea). Some varieties expand when steeped to resemble leaf vegetable greens in smell, appearance, and taste. The process by which sencha and other Japanese ryokucha (緑茶, green tea) is created differs from Chinese green teas, which are initially pan-fired (and could probably, therefore, more accurately be called "roasted" teas). Japanese green tea is first steamed for between 15–20 seconds to prevent oxidization of the leaves. Then, the leaves are rolled, shaped, and dried. This step creates the customary thin cylindrical shape of the tea. Finally, after drying, the leaves are fried to aid in their preservation and to add flavour. [2]The initial steaming step imparts a difference in the flavour between Chinese and Japanese green tea, with Japanese green tea having a more vegetal, almost grassy flavour (some taste seaweed-like). Infusions from sencha and other green teas that are steamed (like most common Japanese green teas) are also greener in colour and slightly more bitter than Chinese-style green teas. Sencha in Japan is drunk hot in the cooler months and usually chilled in the summer months.
